The experience
Kenichiro Hirai trained at Udatsu Sushi in Nakameguro, which held a star in the Michelin Guide Tokyo 2023, and opened Sushi Hazan in Nishi-Azabu in 2022. It has eight seats at a single counter and serves Edomae sushi.
The day starts at Toyosu Market, where he buys his fish every day. You walk the floor of shops selling seasonings, knives and cookware to the trade, then the floor where middlemen sell fish to restaurants, which the public rarely sees. The tuna auction is not part of the visit.
Back at Sushi Hazan the restaurant is reserved for your group. You put on a chef's white coat, step behind the counter and learn to form nigiri. You eat up to ten pieces, and you can set your own beside the chef's, made from the same fish and rice.
