The experience
Sasaya-iori has made wagashi in Kyoto for more than three centuries, for temples, shrines, tea masters and the Imperial Palace. The session takes place at its annex shop, a bright cafe space, at a counter set apart for your group.
A confectioner begins with the history of Kyoto sweets, then makes warabi-mochi in front of you, kneading it over the heat until it turns clear. You eat it fresh with hojicha.
Then you shape a jonamagashi, the finest kind of fresh sweet, wrapping red bean paste in white bean paste in a form that follows the season. You take it into the shop's tea room and eat it with matcha.
