The experience
Sasaki Sake Brewery has brewed in Nishijin since 1893, at the southern end of the site of Jurakudai, Toyotomi Hideyoshi's residence in Kyoto. It draws its water from the wells known as Kinmeisui and Ginmeisui, and it is the only sake brewery still working in the area.
A brewer walks you through the brewery and explains each step and tool, from soaking the rice to bottling. From October to February you can see sake being made. From March to September you see the brewing equipment up close.
Then you taste three or four sake, including a junmai daiginjo not usually poured at tastings, with snacks such as pickles made with the brewery's sake. The shop sells the full range.
